Optimize version logging and tags

Our CHANGELOG.md has some miscategorized changes. For example, `publish bids https://github.com/sensein/b2aiprep/pull/165 ([@alistairewj](https://github.com/alistairewj))` was categorized as a bug in:
https://github.com/sensein/b2aiprep/blob/main/CHANGELOG.md

This might have been because of a Bug tag. We should look into this and fix anything related that needs to be fixed.
