[Enhancement] Add docs versioning

Description

By default, astro doesn't come with doc versioning. We want to add this feature to make sure we'll be able to display docs per project version (for now we only have kyverno doc).

Technical infos

We can use a plugin like: https://github.com/HiDeoo/starlight-versions to add versioning. This will also mean thinking about the versioning experience + architecture of the doc.
