Missing Depth Clip Mode not supported (iOS simulator crash) #9525

Describe the bug
When running the iOS build on a simulator device (XCode 26.1.1), filament crashes with
MTLValidateFeatureSupport:6991: failed assertion `Depth Clip Mode is not supported on this device'
No error when running on Catalyst.
To Reproduce
Run any filament program on an iOS simulator device.
Expected behavior
No crash.

- OS: iOS on simulator on Apple M1
- GPU: Apple M1
- Backend: Metal
